Ingredients (4 servings)
- 10 ml vegetable oil (2 tsp.)
- 625 g chicken breast or thigh strips 1x lb.
- 75 ml all-purpose flour (1/3 cup)
- 125 ml maple syrup (½ cup)
- 30 ml cider vinegar (2 tbsp.)
- 10 ml fresh ginger, grated (2 tsp.)
- 30 ml soy sauce (2 tbsp.)
- 30 ml dry sherry or cider vinegar (2 tbsp.)
- 2 cloves garlic, peeled and chopped
- 2 ml pepper (½ tsp.)
Instructions
- Preheat oven to 160oC (325oF).
- Heat oil over medium heat in an ovenproof skillet. Coat chicken pieces with flour and cook 5 minutes or until thoroughly browned on all sides.
- Blend maple syrup, vinegar, soy sauce, sherry, ginger, garlic, and pepper together. Pour mixture over chicken pieces.
- Bake 5 to 10 minutes, depending on size of pieces, or until drippings are clear.
- Serve with mashed potatoes and kidney beans, if desired.
