Chicken With Ginger and Maple Syrup

10 ml vegetable oil 2 tsp.
625 g chicken breast or thigh strips 1x lb.
75 ml all-purpose flour 1/3 cup
125 ml maple syrup ½ cup
30 ml cider vinegar 2 tbsp.
30 ml soy sauce 2 tbsp.
30 ml dry sherry or cider vinegar 2 tbsp.
10 ml fresh ginger, grated 2 tsp.
2 cloves garlic, peeled and chopped
2 ml pepper ½ tsp.




1. Preheat oven to 160 C (325 F).
2. Heat oil over medium heat in an ovenproof skillet. Coat chicken pieces with flour and cook 5 minutes or until thoroughly browned on all sides.
3. Blend maple syrup, vinegar, soy sauce, sherry, ginger, garlic, and pepper together. Pour mixture over chicken pieces.
4. Bake 5 to 10 minutes, depending on size of pieces, or until drippings are clear.
5. Serve with mashed potatoes and kidney beans, if desired.
